Greg welcomes any denomination to The Bridge because the point of the Bridge is to bridge unlikely people together to create unity on campus.

Mexican Rice

Susan Adcock, mother to Steal Adcock who attends St. Mary’s University, makes her Mexican Rice with special spices and the high-quality Jasmine Rice. An experienced cook since the age of 8, Adcock demonstrates how to cook this style of Mexican Rice while giving necessary advice on adding different ingredients.

Ingredients:

  • 2 tablespoons of oil
  • 1 medium chopped onion
  • 1 cup of jasmine rice
  • 2 tablespoons of chili powder
  • 1 teaspoon of garlic
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of cayenne
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 cups of water

Directions:

In a medium skillet, heat up two tablespoons of oil. Chop up a medium sized onion into small square pieces and add this to the skillet and cook till the onion slices are tender. Add one cup of jasmine rice and two tablespoons of chili powder, one teaspoon of garlic, paprika, 1/2 teaspoon cumin, and 1/4 of cayenne, salt, and pepper to add flavor. Stir well and add two cups of water.

Bring to a boil, cover the skillet with a tight lid, and cut the burner down to a simmer. Simmer the rice for ten minutes and serve warm.

HBG100 Teaser Trailer Premiere

The Henry B. González mosaic was revealed by removing the veils at the Henry B. González Teaser Trailer Premiere event, held in the Law School Building of St. Mary’s University, to commemorate all the great things he did for San Antonio. The event concluded with the premiere of the teaser trailer for the HBG100 Documentary film on the first Mexican-American Mayor in San Antonio, Henry B. González.

Jose Tapia is a sophomore at St. Mary’s University with a major in Communication Arts with a minor in Music. Tapia has been playing piano since he was about 7 years old and enjoys playing piano because to him it is a constant learning process that he can continue to grow in through practice.

Carmen R. Morales Escudero is a sophomore at St. Mary’s University with a major in English Communication Arts and a double-minor in Theater and Spanish. Escudero loves writing poetry because she feels that an individual may not write the best poetry, but if that individual’s poem can reach someone, then that is what matters most.
